Baker's Tips
🔥 Use medium-low heat to caramelize the bread slowly and evenly without burning the sugars.
🍊 Fresh orange zest enhances the traditional Greek flavors and adds brightness to every bite.
🥄 Crème anglaise should be silky, smooth, and pourable, never thick like pudding.
Directions
In a saucepan over medium-low heat, combine the milk, heavy cream, vanilla, and orange peel. Warm gently until hot but not boiling.
In a separate bowl, whisk together the egg yolks and sugar until pale and smooth.
Slowly pour the warm milk mixture into the egg yolks while whisking continuously. Return everything back to the saucepan over low heat and stir constantly until the sauce slightly thickens and coats the back of a spoon.
Do not boil.
Remove from heat and strain for a silky smooth texture. Set aside warm.
Step 2 — Prepare the French Toast Custard
In a shallow bowl, whisk together:
Eggs, Milk, Heavy cream, Vanilla, Orange zest, Cinnamon, Honey, Salt
Step 3 — Dip the Tsoureki
Dip each slice of tsoureki into the custard mixture for a few seconds on each side.
Do not oversoak the bread.
Step 4 — Cook Until Golden
Heat a non-stick pan over medium-low heat and melt butter.
Cook each slice for 2–3 minutes per side until golden brown and lightly caramelized.
Step 5 — Assemble
Place the warm tsoureki French toast onto serving plates and generously pour over the crème anglaise.
Top with fresh berries, crushed pistachios, powdered sugar, orange zest, and a drizzle of honey.
Serve immediately.
