Baker's Tips
Do not add extra flour, the dough should remain soft and slightly sticky. Use buttered hands to handle the dough instead of adding more flour.
🔥 Create the perfect rising environment (optional)
For a better rise, preheat your oven to 40°C (105°F), turn it off, and place the dough inside during both rising stages. The gentle warmth helps create a soft, fluffy tsoureki.
🕊 Avoid overproofing
Do not let the shaped dough rise too much before baking, as the Colomba may lose its shape. Maximum 2 hours
🔥 Protect the top while baking
If the Colomba browns too quickly, loosely cover the top with foil.
🍰 Cool before slicing
Let the Colomba cool completely to keep the crumb soft and prevent tearing.
Directions
Step 1 – Prepare the Wet Ingredients
In a bowl, mix the milk, eggs, orange zest and salt. In a stand mixer, briefly mix the contents of the bottle. Add the wet ingredients and knead for about 15 minutes.
Step 2 - Add the Butter
Gradually add the butter while mixing until the dough becomes smooth and elastic.
Step 3 - First Rise
Shape the dough into a ball, place it in a greased bowl, cover with plastic wrap, and let it rise in a warm place for up to 2 hours.
Step 4 - Shape the Colomba
Divide the dough into two pieces, roll them into ropes, and place them in the Colomba mold to form the traditional dove shape.
Step 5 - Second Rise & Bake
Let rise again for up to 2 hours. Top with almond glaze, almonds, and pearl sugar. Bake at 320°F (160°C) for 35–40 minutes until golden.
Step 6 - Cool & Enjoy
Let cool completely before slicing and serving.
