Directions
Step 1: Prepare the Koulourakia
Bake your One Bottle Bakery Koulourakia according to the package instructions and allow them to cool completely. Break them into bite-sized pieces and place them in a large mixing bowl.
Step 2: Add the Mix-Ins
Add the chopped walnuts and, if using, the Metaxa or brandy. For an extra special touch, gently fold in a few spoonfuls of sour cherry spoon sweet. The cherries add a beautiful burst of flavor that pairs perfectly with the chocolate.
Step 3: Make the Chocolate Mixture
In a saucepan over medium heat, combine the butter, sweetened condensed milk, cocoa powder, and vanilla. Stir until the butter has melted and the mixture is smooth.
Remove the saucepan from the heat and add the chopped dark chocolate. Stir until the chocolate has completely melted and the mixture is glossy.
Step 4: Combine Everything
Pour the warm chocolate mixture over the broken Koulourakia and gently fold everything together until every piece is evenly coated.
Step 5: Shape the Log
Transfer the mixture onto a large sheet of parchment paper. Shape it into a log, then wrap it tightly with the parchment paper. Wrap again with aluminum foil to help maintain its shape.
Step 6: Freeze
Place the chocolate log in the freezer for at least 3–4 hours, or until completely firm. It can be stored in the freezer for several weeks, making it the perfect make-ahead dessert.
Step 7: Serve
Remove the chocolate log from the freezer a few minutes before serving. Slice into pieces and dust with cocoa powder or icing sugar if desired.
Enjoy with coffee, after dinner, or as a refreshing summer dessert straight from the freezer.
